Rainbow Cake with Cream Cheese Frosting Recipe


A couple of years ago I made a rainbow cake for my daughters birthday. This was before I was blogging so the pictures are pretty sparse & basic.

I combined 2 white cake mixes and then divided the cake batter into 6 bowls and added food coloring.
I didn't have 6 round cake pans so I just bought extra foil pans at the grocery store.



I spread a layer of cream cheese frosting between each cake layer and then all over, 
it was a pretty tall cake. 


I used smarties & marshmallows for the rainbow!

It was super yummy and a big hit!


Cream Cheese Frosting

Ingredients

  • 2 (8 ounce) packages cream cheese, softened

  • 1/2 cup butter, softened

  • 2 cups sifted confectioners' sugar

  • 1 teaspoon vanilla extract


Directions

In a medium bowl, cream together the cream cheese

 and butter until creamy. Mix in the vanilla, then 

gradually stir in the confectioners' sugar. Store in the

 refrigerator after use.

  4. I just LOVE rainbow cakes! I did a lazy version for my daughter and did a bundt style and just layered the batter in the pan. LOL! It looked very different, yet cool! I should have made a cream cheese frosting though...yummm!
